INGREDIENTS
2 cups gluten free all purpose flour blend
1½ tsp baking powder
1 tsp baking soda
½ tsp salt
4 T butter, softened
½ cup coconut oil
½ cup sugar
2 eggs
1 tsp vanilla extract
¼ cup dried cranberries and or golden raisins
¼ cup dried sunflower seeds (optional)
1 cup white chocolate chips plus ¼ cup for decoration
INSTRUCTIONS
Preheat oven to 375° and line a 9" x 9" square baking dish with parchment paper
In a medium bowl, combine flour, baking powder, baking soda and salt with a fork and set aside
In a stand mixer, beat butter, coconut oil and sugar until well combined
Add the eggs, one at a time, making sure each one is fully incorporated before adding the other
Add vanilla extract and beat until well combined
Slowly add the dry mixture a third at a time, scraping the bowl after each addition
Add the cranberries, sunflower seeds and white chocolate and mix until everything is well combined
Pour the dough into the parchment lined baking dish and bake for 15 minutes or until a toothpick comes out clean
Let cool completely before cutting into bars
Drizzle melted white chocolate and cranberries on top
