INGREDIENTS
2 cups gluten free all purpose flour blend
⅔ cup granulated sugar
1 tsp baking powder
½ tsp salt
½ cup coconut oil, solid
1 tbsp water
1 tbsp vanilla extract
2 eggs, lightly beaten
6 oz chocolate chips
1 T coconut oil
4 peppermint candy canes, crushed
INSTRUCTIONS
Combine gluten free flour, sugar, baking powder and salt in a food processor and pulse together about 10 times or until well combined.
Add the coconut oil and pulse together until mixture resembles coarse crumbs.
In a separate bowl, beat together the water, vanilla, and eggs.
Turn on the food processor and pour the mixture through the feed tube at the top
The dough will be sticky
Place the dough into a bowl, cover and place in the refrigerator for at least an hour
Preheat oven to 350°
Place dough into a piping bag fitted with a #150 tip and pipe 1 inch long pieces onto a parchment lined baking sheet
