Ingredients
Filling
4 cups quartered or halved strawberries
1/4 to 1/2 cup sugar (depending how sweet are your strawberries)
2 tablespoons cornstarch
Crumble
2/3 cup all-purpose flour
3 tablespoons sugar
1/4 teaspoon baking powder
3 tablespoons cold butter, diced
1 egg yolk
Instructions
Heat the oven to 350F.
In a mixing bowl combine the strawberries with sugar and cornstarch. Spoon the berry filling into four 8 oz each ramekin or one 1qt baking dish.
To make the crumble topping, add all the ingredients to a food processor.
Pulse a few times until the mixture resembles pea-size crumbs and sprinkle it over the berry filling.
Place the ramekins on a baking sheet and bake in the preheated oven for 25-30 minutes or until the filling is bubbly and the topping is light brown.
Carefully remove from the oven and serve hot, warm or cold.
Optional, top each crumble with a scoop of vanilla ice-cream.
