Cake
4½ cups all purpose flour
2 teaspoons salt
1 teaspoon grated nutmeg
zest of one lemon
1 tablespoon olive oil
4½ teaspoons of active dry yeast (2 packets)
½ cup granulated sugar
1½ sticks butter, melted
1 cup milk, warm (110-115°)
5 egg yolks, room temperature
½ cup light brown sugar
2 teaspoons cinnamon
Icing
3 cups powdered sugar
3 tablespoons milk
1 teaspoon vanilla
food coloring, purple, gold and green
sprinkles, purple, gold and green(optional)
INSTRUCTIONS
Cake
In a medium bowl, combine the flour, salt, nutmeg and lemon zest. Set aside
Using a stand mixer with a dough hook, mix the yeast, granulated sugar, melted butter and milk on low speed for one minute
Add the egg yolks and beat for another minute
Slowly add the flour mixture to the wet ingredients and beat until the ingredients are incorporated
Increase the speed of the mixture and beat until the dough pulls away from the sides of the bowl and forms a ball
Coat a medium to large sized bowl with the olive oil
Place the ball of dough into the bowl and turn to coat it evenly with the olive oil
Cover with plastic wrap and let it rest for two hours. It will double in size
Preheat oven to 350°
Turn the dough onto a lightly floured surface and roll the dough into a 30" x 8" rectangle
Spread the light brown sugar and cinnamon evenly over the rolled out dough making sure to keep it about an inch from the edges
Fold the dough over lengthwise and then fold it over lengthwise again. You will end up with a long roll shaped dough. Pinch the edges to seal the dough
Place the dough onto a parchment paper lined baking sheet that has been lightly sprayed with cooking spray
Bring the ends of the dough together to form a circle
Brush the outside of the cake with milk
Bake for 20-30 minutes or until the outside is golden brown
Remove from oven and let cool completely before decorating
Icing
In a small bowl, stir the powdered sugar, milk and vanilla together until smooth
Separate the mixture into three bowls
Use food coloring to create the three separate icing colors of purple, green and gold
Drizzle the icing over the cake alternating colors as you go.
Add sprinkles (optional)
