Ingredients:
- 1 cup peanut butter
- 3/4 cups white sugar
- 1/4 cup brown sugar
- 1/4 cup unsalted butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 3/4 cup flour
- 1 teaspoon baking soda
- 1 pinch salt
- Vanilla ice cream, for serving
- Chocolate sauce, for serving
Directions:
- Preheat oven to 350 degrees. Grease a regular size muffin pan with cooking spray. Set aside.
- With a stand mixer, cream together peanut butter, sugars and butter until smooth. Beat in the eggs and vanilla.
- In a separate bowl, whisk together the stir in the flour, baking soda and salt. Then combine with the wet ingredients.
- Using a regular size cookie scoop (or 2 Tablespoons) and scoop the dough into the muffin pan. Press down in the center of each cookie, with your fingers or a small spice jar, to make a cookie cup.
- Bake for 8 to 10 minutes. Allow to cool completely before removing from muffin pan. Then remove cookie cups from the pan.
- Once cool, top each cookie cup with your favorite ice cream and toppings. Enjoy!
