Pumpkin Donuts
⅓ cup shortening
3 eggs
1½ cups sugar
1 15 oz. can of pumpkin puree
1½ tsp pumpkin pie spice
1½ tsp salt
1½ tsp baking powder
2 cups all purpose flour
Cream Cheese Frosting
8 oz. cream cheese, softened
1 stick of butter, softened
1 cup powdered sugar
1 tsp vanilla extract
Candied Pretzels
1 cup crushed pretzels
2 T melted butter
½ tsp pumpkin pie spice
3 T light brown sugar

Pumpkin Donuts
Preheat oven to 350° and lightly grease two donut baking pans
In a medium bowl, beat the shortening, eggs, sugar, pumpkin, pumpkin pie spice, salt and baking powder until fully incorporated
Add the flour and mix until smooth
Fill each donut well ¾ full with batter
Bake for 20 minutes or until a toothpick inserted into the center comes out clean
Remove from the oven and let cool for 5 minutes before transferring them to a cooling rack
Cream Cheese Frosting
In a small mixing bowl, beat the cream cheese and butter until smooth
Add powdered sugar and vanilla extract and then beat until fully incorporated
Candied Pretzels
Place all ingredients in a plastic bag and shake to coat pretzels
Pour the candied pretzels onto a plate
Spread cream cheese frosting onto a donut and then press it into the candied pretzels
Drizzle with salted caramel
