Peanut butter cookie sundae cups

  • 1 cup peanut butter
  • 3/4 cups white sugar
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3/4 cup flour
  • 1 teaspoon baking soda
  • 1 pinch salt
  • Vanilla ice cream, for serving
  • Chocolate sauce, for serving
  • Preheat oven to 350 degrees. Grease a regular size muffin pan with cooking spray. Set aside.
  • With a stand mixer, cream together peanut butter, sugars and butter until smooth. Beat in the eggs and vanilla.
  • In a separate bowl, whisk together the stir in the flour, baking soda and salt. Then combine with the wet ingredients.
  • Using a regular size cookie scoop (or 2 Tablespoons) and scoop the dough into the muffin pan. Press down in the center of each cookie, with your fingers or a small spice jar, to make a cookie cup.
  • Bake for 8 to 10 minutes. Allow to cool completely before removing from muffin pan. Then remove cookie cups from the pan.
  • Once cool, top each cookie cup with your favorite ice cream and toppings. Enjoy!
